Key Responsibilities:
- Planning seasonal menus in consultation with management for the restaurant, bistro and function services, while assisting with food cost control and ingredient ordering.
- Preparing, cooking and presenting a wide range of modern Australian dishes for lunch, dinner, weddings, private functions and special dining events.
- Monitoring the quality, consistency and presentation of meals throughout preparation and service to maintain high culinary standards.
- Liaising with management and front-of-house staff regarding menu planning, dietary requirements, special requests and function catering.
- Demonstrating cooking techniques and providing guidance and training to junior kitchen staff to ensure consistency and efficient kitchen operations.
- Maintaining high standards of food safety, hygiene and workplace health and safety in accordance with regulatory requirements.
- Supervising kitchen operations during busy service periods to ensure meals are prepared and served efficiently.
- Assisting with stock control, food storage, rotation and preservation to minimise waste and maintain product quality.
- Contributing to the development of seasonal specials and function menus to enhance the dining experience.
Qualification and Experience
- Minimum qualification is a Diploma in Hospitality. Adequate industry experience may be considered in lieu of formal qualifications.
- Previous experience as a Chef in a high-volume restaurant, with the ability to prepare and present a diverse range of modern Australian cuisine.
- Demonstrated ability to consistently produce high-quality meals in a fast-paced restaurant and function environment, including weddings, private events and large group bookings.
- Strong understanding of food safety, hygiene and commercial kitchen operations.
- Excellent organisational and time management skills, with the ability to perform efficiently during busy service periods.
- Strong leadership and communication skills, with the ability to supervise, train and work collaboratively with kitchen staff.
- Ability to maintain high standards of food quality, presentation and consistency while coordinating multiple service demands.
