Blow Horn opened in 2024 with a vision to serve authentic fare, made from scratch with the freshest ingredients, and full of flavour. Located in the heart of Albury's main street opposite Regent Cinemas, we are an Indian and Middle Eastern restaurant offering an exciting and diverse menu, from street-food inspired appetisers like samosas, kebabs, koftas, and paneer pakora, through to rich mains of lamb shoulder, Egyptian beef, Moroccan chicken, traditional Indian curries, handmade flatbreads, and house-made desserts. For breakfast, we put our own twist on the classics, think Shawarma Benedict and Blow Horn Pancakes with pistachio knafeh, chocolate drizzle, and rose. We are passionate, family-focused, and growing, and we're looking for a skilled Cook to join our kitchen team.

About the Role

As a Cook at Blow Horn, you will prepare, season, and cook a wide range of Indian and Middle Eastern dishes across our breakfast, lunch, and dinner service. Working in a vibrant, scratch-cooking kitchen environment, you will bring authenticity, precision, and care to every dish, helping us deliver the bold flavours and quality our guests keep coming back for.

Key Duties & Responsibilities

Examining foodstuffs to ensure freshness and quality prior to preparation and cooking
Regulating temperatures of ovens, grills, tandoors, and other cooking equipment
Preparing and cooking food using a range of methods including grilling, braising, frying, steaming, and slow cooking
Seasoning food during cooking to achieve authentic and consistent flavour profiles across Indian and Middle Eastern dishes
Portioning food, plating, and adding sauces, garnishes, and accompaniments to ensure dishes are well presented
Preparing street-food style appetisers, curry-based mains, flatbreads, rice dishes, breakfast items, and house-made desserts
Preparing food to meet vegetarian and other dietary requirements in line with the menu
Storing food in temperature-controlled facilities in accordance with food safety standards
Cleaning food preparation areas and equipment to maintain a hygienic kitchen environment
Receiving and storing supplies as required
Assisting with menu preparation and food requirements as directed by the head of kitchen

Requirements

AQF Certificate III in Commercial Cookery including at least two years of on-the-job training, or AQF Certificate IV (ANZSCO Skill Level 3)
Proven experience of at least 1 year as a Cook in an Indian, Middle Eastern, or similar cuisine restaurant or kitchen
Strong knowledge of Indian and/or Middle Eastern cooking techniques, spices, and ingredients, including curries, kebabs, biryanis, flatbreads, and mezze
Ability to prepare food from scratch to a consistent, high-quality standard across a full-service operation
Sound knowledge of food safety and hygiene standards (Food Handler Certificate preferred)
Ability to work efficiently across breakfast, lunch, and dinner services
At least three years of relevant experience may substitute for formal qualifications
